Skinny Spiced Breakfast Muffins

These are delightful.
Light airy, and delicious.
Gluten and refined Sugar Free. WIN.

Great for on the go or as a mid morn snack.

You will need –

2 cups gluten free flour
1 1/4 cup Stevia
2 Egg Whites (use egg substitute for Vegan option)
2 Carrots (Grated)
2 Bananas (Mashed)
1 teaspoon ground allspice
1 teaspoon Cinnamon
1/2 Cup Raisins
Teaspoon Maple Syrup
Teaspoon Baking Soda
2 Teaspoons baking powder

Method –
Pre Heat oven to 190C

In a bowl whisk egg whites, stevia and banana until a fluffy airy consistency (this really important to maintain the airy texture of the muffins.)
In a separate bowl sieve flour, stevia, baking soda & powder and all spices and mix well.
Then add to the egg mixture and fold keeping as much air as possible.
Add the Maple Syrup, raisins and carrot and mix well.
Pop into muffin cases or baking parchment and bake for 15-20mins until risen and golden..

Leave to cool and store in an airtight container.

Smother in Peanut Butter and devour.
