This recipe is so tasty… You’ll be hard pushed to not eat the whole batch in one go like I did. Guilty, yes.

Nom Organics make a selection of Vegan Popcorn  which is not only delicious it’s totally guilt free. When they contacted me about creating a recipe using their Salted Maple and Cinnamon Maple varieties I couldn’t wait to get baking!

So – to create these delicious Vegan, gluten free beauties you will need –

2 Bags of Salted Maple Popcorn

15 Dates

2 teaspoons of Cinnamon

1 table spoon of Agave Nectre

1 teaspoon of Vanilla Essence

large handful of hazlenuts

1 cup Ground Almonds

Method –

Pop the dates, agave, vanilla, almonds, cinnamon and hazelnuts into a high speed blender with 1 cup of boiling water and blend until sticky.

Place the popcorn into a bowl and pour the mixture over he top and mix until covered.

Pre heat your oven to 180 degrees and on a baking tray lay parchment and grease using coconut oil. Layer the mixture around an inch thick and bake for 30 mins.

While this is happening take a table spoon of Cacao Powder, agave and cinnamon and blend to make a chocolate drizzle.

Once baked remove from the oven and cool, drizzle the cacao mixture ontop and then score with a knife to make flapjacks.

Place this in the fridge for roughly 2 hours until solid.

The same method goes for the Cinnamon Maple – However I used –

10 Dried Apricots

1 tablespoon of Maple Syrup

1 teaspoon Cinnamon

1 teaspoon of Meridian Peanut Butter

1 cup of Oats

handful of Hazlenuts

Repeat the above – Voila delicious guilt free yummies.
