No Bake Breakfast Vanilla ‘Cheesecake’

I know what you are thinking…

Cheesecake, for breakfast? The woman has lost it. Well my friends don’t be mistaken by this it has all the properties of a nutritious brekkie.
It’s creamy, sweet, gluten and sugar free – not to mention it takes just 10mins to throw together!!!

This recipe makes 1 individual portion – amounts can be doubled to make larger ones.

You will need –

Base –
6 Hazelnuts
1/4 cup Gluten Free Oats
1/2 teaspoon Coconut Oil
Splash of Agave
Pinch of Cinnamon

Topping –
Total 0% Greek Yoghurt (can be substituted for a frozen banana to make Vegan)
Vanilla Extract
1/8 Vanilla Pod
Pinch of Stevia (Omit if using banana)

Start with your base – pop all ingredients into a bowl and using your hands bind them altogether into a base and press into a small jar
With an electric whisk whip the Yoghurt (or if using frozen Banana a blender will be better) with the Vanilla into a light cheesecake topping. Spread ontop of the base and top with whatever you fancy. I went for traditional blueberries.

So simple, so delicious.

My sister ate most of this one… I had a small spoon before it was snatched back and devoured. Always nice when creations are enjoyed.
