Gingerbread Granola

I honestly can’t express how delicious this Granola is. Nutty, spiced and sweet.
Completely Gluten and Vegan friendly.
I am not Vegan. I do however love fruit and vegetables. I live a semi Vegan life in that I don’t eat meat, all I consume is Fish and not everyday. Having problems with my digestive system means that this way of living suits me a lot better and I just love fresh fruit and veg. I dislike all dairy products (ok I love cheese, but only a Christmas) Like I say, a fibre filled diet is the only way I feel comfortable on a daily basis. Most people I speak to think it’s boring… Not for me. I get very creative and living a cleaner lifestyle has improved my digestion, skin AND mental health.

So… I will post more on that at a later date. Today a recipe for Granola.

You will need-

6 Soaked Medjool Dates
Teaspoon of Agave
1 cup Gluten Free Oats
1/2 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
1/2 Teaspoon Ground Ginger
Assorted nuts and seeds of choice, I like linseed, almonds, macadamias and hazelnuts.
Handful of sultanas

Pre heat the oven to 190C
Start by taking the soaked dates and agave, and pulse in a blender until a paste. In a separate bowl throw all the dry ingredients together (leave sultanas till after) really give them a good mix, pour over the date syrup and combine until a sticky mixture. Throw sultanas in. Spread the mixture onto baking parchment and pop in the oven. It can take up to 40mins – check on it every so often and turn the mixture so every part of it can crisp up.
Once all crisp leave to cool and store in an air tight container. EAT WITH EVERYTHING.
